Kelly Whitaker is the only chef in Colorado holding two Michelin stars, which makes a limited rooftop pop-up under his name a genuine occasion rather than a marketing line. SHEEP runs a fire-and-ember menu on the Clayton Hotel rooftop in Cherry Creek.
The format is a four-course tasting around $95, with seatings from early evening. It runs as a three-month residency, July 8 through October 4, so the window is real but not endless.
